This Week’s “The Best of The Sarasota Post” – The First and Best Brick Oven Pizza at The Sarasota-Bradenton Border!

I have written about this fabulous Italian Restaurant, PRIMO RISORANTE,  before! It’s a great family-friendly establishment that has been around for over 30 years!

Great Italian food and, in my opinion, the best brick-oven pizza in town. There is nothing like a pizza that comes out of a hot wood-fired brick oven. Crispy crust and oh so delicious!



Chef-Owner, Maurizio Colucci built the first wood-fired brick oven in our area in 1986. He explained to me that there are many little things that go into the process of making a fantastic brick oven pizza. You must have a hot, hot, hot oven! The process starts in the morning getting the fire going and getting the oven white hot. It’s a very tedious and meticulous process keeping it so hot all day and evening!

Wood-burning brick oven at Primo Ristorante in Sarasota, FLI also spoke with Katherine who, along with her brother Andrew, are pizza makers “supreme”. She explained that pizza bakes much faster in a wood burning oven. You have to stay on top of things and 10-15 seconds can make the difference between the perfect pizza and one that stays in the oven too long and burns. Maurizio has personally taught his team how to make the perfect brick oven pizza. Andrew and Katherine are 2 of the best!
