This Week’s ‘Best of The Sarasota Post’ – The Best Restaurant General Manager I Know

So, what makes a good restaurant GM? Someone who maintains high standards for the restaurant in food prep and delivery to the customer, keeps everyone safe, encourages the staff to do the best they can, AND makes money for the company.

Bob Slicker, GM at The Swordfish Grill and Tiki in Cortez, Florida, not only does all that, but he does it without micromanaging his team or making anyone feel like they can’t do well. When Bob does finally take some time away from the restaurant, the customers can’t even tell the difference in how they are treated by the staff. He has trained them so well and they are so confident in their abilities! That’s a great GM that can do that!



Bob Slicker, GM of Swordfish Grill and Tiki, loves the Tampa Bay LightningWhen Bob is at the restaurant (more often than not!) he takes time to talk with his customers and has cultivated many long-lasting friendships. His love of the Tampa Bay Lightning spills over to anyone who meets him! When they’re playing EVERYONE gets to watch at The Flippin’ Mullet bar inside the restaurant. Or, if you’re lucky, you’ll go with him and a bunch of fans on the Monkey Bus and watch them live at the Amalie Arena in Tampa!

There are several festivals that happen in the parking lot of the Swordfish throughout the year. Bob, and his team, work for months to plan these. The live music, food vendors, beer trucks, art vendors, parking…all need to be coordinated ahead of time. All of his festivals are successful. Bob also works as the Emcee for the bands, encouraging folks to shop the vendors and make charitable donations.

His staff is also infected with this wonderful bug! At Christmas time Bob and the staff help Betsy Plante and The Blessing Bags Project to bring a gift-filled, Breakfast with Santa to dozens of children who might not otherwise have much of a Christmas. Bob also goes to Hungers End in Bradenton in a Santa suit and hands out presents to even more kids!

There’s always something going on at the Swordfish. Bob and his clever staff have implemented several ideas that occur weekly; NASCRAB Races, AUCE Snow Crab, Happy Hour Extravaganza, Build Your Own Bloody Mary, etc. And he also has live music 9 times a week! He’s always collecting something for someone; school items for back-to-school, candy for Halloween, Legos for his Birthday Bash (coming up this week, Wednesday, Aug. 14).
