Delicious Fresh Fruit Mocktail Recipes to Liven Up Your Summer Here on The Suncoast

Everyone is starting to feel the heat here on the Suncoast. It goes from raining to ninety degrees in the blink of an eye. We all know that cool refreshing drinks are one sure-fire way to beat the heat and thrive during these blistering summers. While cocktails are one way to add a tad bit of fun, we have an enticing list of mocktail recipes here, sure to refresh and add some flavor to your summer. The good news, these are all ages, boating and driver-friendly drinks, so what is not to love.

Raspberry Lemonade Virgin Mojito

Anyone who knows the cool refreshing goodness of a fresh mojito needs to give this drink a shot. With fresh raspberry and mind, these are sure to be a hit all summer long.

Raspberry Mojito

INGREDIENTS

  • 15 mint leaves
  • 1 oz simple syrup
  • 2 oz freshly squeezed lime juice
  • 8 oz Dasani Sparkling Raspberry Lemonade
  • Garnish: Raspberries, mint, lime wedge

DIRECTIONS

  1. Place the mint leaves in the bottom of a tall highball glass.
  2. Gently muddle the mint with a muddler or other blunt object.
  3. Add the simple syrup and lime juice to the mint.
  4. Add a handful of ice cubes.
  5. Top with Dasani Sparkling Raspberry Lemonade.
  6. Garnish with fresh raspberries, a sprig of mint, and a lime wedge.
  7. **NOTE** This recipe makes one serving, but you can easily double, triple or quadruple for serving a group.

Roasted Peach and Strawberry Fizz

INGREDIENTS

  • 3 peaches
  • 600 g strawberries
  • 1 1/2 cup apple juice
  • 1 1/2 sparkling water
  • an abundance of crushed ice

DIRECTIONS

  • Preheat the oven to 175 °C.
  • Cut peaches in half and remove the pit. Cut strawberries in half. Place the fruit on a baking tray lined with baking paper and roast for 25 minutes.
  • Take the tray out and leave to cool for 10 minutes or more.
  • Remove the skins from peaches and blend the flesh with apple juice in a blender to get a smooth pureé.
  • Blend the strawberries separately.
  • Divide the strawberry pureé into six glasses and add ice. Pour the peach and apple juice mixture over ice and add sparkling water.
  • Serve immediately.

Grapefruit and Rosemary Mocktail

Want to shake things up a bit? This sweet, sour with aromatic undertones mocktail might do the trick. This one is not for the faint of heart, but if you are a grapefruit lover, this might be the summer mocktail for you.

INGREDIENTS

  • 1 cup water
  • 1 cup granulated sugar
  • 3 sprigs of rosemary
  • 2 cups fresh pink grapefruit juice
  • 1/4 cup of the rosemary simple syrup
  • 4 cups sparkling water

DIRECTIONS

  • Rosemary Simple Syrup: In a small saucepan on the stove, add 1 cup of water and 1 cup of granulated sugar over medium heat. Dissolve the sugar for about 5 minutes. Do not let the mixture boil, or crystals will form. Once the sugar has dissolved, pour the simple syrup into a heat safe container. Add 3 sprigs of rosemary and let steep for at least one hour. The syrup will keep in the refrigerator for ten days.
  • Add 1/2 cup fresh pink grapefruit into a serving glass. Add 1 Tablespoon (1/2 oz) of rosemary simple syrup. Stir. Fill the remainder of the glass with sparkling water (about 1 cup)
  • Garnish with rosemary sprig
  • Served chilled

Smores Mocktail

Reinvent a favorite from your childhood, and share with friends. This Smores mocktail is smooth, silky and delicious. This might be one drink to transition from summer to the cooler temperatures of fall.

INGREDIENTS

  • 1- ounce caramel syrup
  • 1- ounce chocolate syrup
  • 3 ounces milk or milk substitute
  • Graham cracker
  • Spreadable Fudge
  • 1 tbsp marshmallow cream
  • 1 strawberry sliced

DIRECTIONS

  • To make the mini Graham cracker smores break a Graham cracker in half and smear on spreadable fudge. Add the marshmallow creme.
  • Brown the marshmallow creme by placing the prepared Graham crackers in the oven set on the broil setting.
  • Watch them closely; they will burn quickly.
  • Remove S’mores Graham crackers and top them with a sliced strawberry.
  • Mocktails: Into a cocktail shaker, add caramel syrup, chocolate syrup, milk, and ice.
  • Secure the lid of the cocktail shaker and shake vigorously for 20 seconds.
  • Strain into shooter glasses.

Virgin Piña Colada – Fit Style

We did not forget those of you needing a super fit, refreshing drink this summer. This Virgin Pina Colada has none of the alcohol or other unnecessary things of the original. But, on the other hand, it tastes like a beach in a glass and will keep you hydrated and ready for your next summer adventure.

INGREDIENTS

  • 1 cup fresh pineapple (use frozen if you don’t have fresh on hand)
  • 5-6 ice cubes — exclude if using frozen pineapple
  • ½ cup unsweetened coconut milk/water or ¼ cup of coconut cream plus ¼ cup water
  • 1 tbsp agave syrup
  • 2 tbsp unsweetened desiccated coconut

What summer picnic would be complete without watermelon? Am I right? That sweet, juicy fruit is a fan favorite of many for summertime cooling down and refreshing snacks. So why not incorporate it into an amazing summer mocktail and really kick things up in the fun department?

INGREDIENTS

  • 1 cup coconut water
  • ½ cup watermelon puree
  • 1 teaspoon stevia
  • ½ cup ice cubes, or as desired

DIRECTIONS

  • Blend coconut water, watermelon, and stevia in a blender until smooth
  • Fill a cocktail shaker with ice; add watermelon mixture. Cover shaker and shake until chilled; pour into a poco grande glass.

These five mocktails are just the beginning of the amazing refreshing drinks you could create this summer.
