Smoked Salmon Mousse Tartlets with Endive, Wild Mushroom Tartlet with arugula pesto, Beef Wellington with goat cheese and fresh basil ~ Second Course ~ Chilled English Pea Soup with prosciutto crisp ~ Third Course ~ One choice: • Chicken Florentine • Braised Short Rib & Guinness Pie • Rosemary & Lemon Honey Glazed Salmon with a citrus beurre blanc • Vegetable Torte with layers of white & sweet potato, yellow squash, eggplant, zucchini, Roma tomato, spinach & parmesan cheese ~ Fourth Course ~ English Cheese Board & Dessert Tarts & Trifles.
