I want to start off by saying that there are many wonderful restaurants in our area that serve fabulous pizza. There is something very special about a brick oven pizza.
Located at 8076 N. Tamiami Trail in Sarasota, across from the Sarasota-Bradenton International airport, Primo-Ristorante has the first wood burning pizza oven in our area.
Chef-Owner, Maurizio Colucci explained to me that there are lots of little things that need to be done to bake a really good brick oven pizza. The most important factor is a hot oven! Every morning, the process starts with getting the fire started and bringing the oven to a “white hot” temperature. The process of keeping the oven hot can be tedious, especially keeping it hot throughout the day and night.
The pizza bakes much faster in a wood burning oven. You have to stay on top of things and 10-15 seconds can make the difference between the perfect pizza and one that stays in the oven too long and burns. Maurizio has personally taught his team how to make the perfect brick oven pizza. Andrew and Katherine are 2 of the best!
And, the pizza? Oh wow! Just marvelous….. crispy crust and oh so delicious. My favorite? “The Works”! It has a little bit of everything. Gluten Free? Yes, it is available.
