An Evening of Elegance and Culinary Delight at the New St. Regis Longboat Key

As the editor of the Suncoast Post, I was invited to experience an evening of cocktails and fine dining at the newly opened St. Regis on Longboat Key, Florida. Accompanied by one of our writers, Nancy, we embarked on what turned out to be an unforgettable evening, complete with picturesque views, impeccable service, and a taste of gourmet indulgence.

Upon our arrival at the “Oshen” bar, we were greeted by Bailey, a Sarasota native whose warmth and enthusiasm made us feel right at home. Bailey was not only our bartender but a remarkable storyteller, sharing insights about the resort and her experiences as part of the St. Regis team. It was clear from her words and demeanor that she took immense pride in her work. She introduced us to several of her co-workers—Amber, Liam, and Spencer—each one bringing their own charm and warmth to our experience. Friendly, approachable, and genuinely passionate, the team at Oshen felt like old friends by the time we settled in with our drinks.

Sipping my favorite bourbon over a single, large ice cube, I found myself in awe of the stunning view of the Gulf of Mexico, which stretched out beyond the bar, offering a mesmerizing backdrop. Nancy enjoyed a glass of Caymus red, a beautifully balanced wine that she remarked was as rich and complex as the ambiance. There’s something truly special about watching the sun set over the Gulf, with a perfectly crafted drink in hand and delightful company around—especially when it feels like you’re part of an extended family, thanks to the personable team at Oshen.

After enjoying our time at Oshen, Bailey graciously escorted us to the “CW Steakhouse” for the main event of the evening. We were met by Georgette and Mathew, who greeted us with warm smiles and escorted us to our table with genuine hospitality. Our server, Robert, arrived shortly after and introduced himself not only as our server but also as the steakhouse’s Sommelier. His knowledge of the restaurant and thoughtful wine recommendations only added to the rich experience. Nancy opted to stay with a glass of Caymus, while I indulged in a second bourbon.

The meal that followed was nothing short of culinary art. At different points in the evening, we had the pleasure of meeting Chef Victor and Chef Alberto, who both took time to visit our table, sharing insights into the dishes we had ordered and their experiences working at the St. Regis. It was evident that they both had a passion for their craft and a commitment to delivering an exceptional dining experience. Chef Victor brought us a special appetizer topped with Caviar for which you could die for.  The “CW” Caeser salad was so different and very tasty. Nancy chose the prime-aged “Cowboy” steak, a generous and impeccably cooked cut that she described as pure perfection. I opted for a specially prepared Australian lamb dish, each bite showcasing layers of flavor and texture that only a chef with true expertise could create.

The sides were equally memorable. A local honey heirloom carrot dish caught me off guard with its vibrant flavor, easily the best carrot preparation I’ve had. We also enjoyed creamy, buttery mashed potatoes and homemade, melt-in-your-mouth bread that perfectly complemented our entrees. The highlight of the meal for me, however, was when Robert presented us with a case containing an array of specialty knives. He took a moment to explain each knife’s purpose, making us feel like we were part of a unique experience tailored just for us.  Dessert was mouthwatering.  A crispy apple topped with vanilla ice cream was a perfect way to end the meal.

Everything about the evening, from the food and drink to the service and setting, was executed flawlessly. Our experience at the St. Regis on Longboat Key was a perfect “10.” The dedicated staff, exceptional cuisine, and unmatched ambiance made for a fabulous night that will linger in our memories.
